And now I am sharing with you perhaps my favorite out of them all, Chicken Gyro Soup. A Soup that tastes precisely like a gyro.
This Chicken Gyro Stew is whole 30 approved if you don’t add any garnishes. It is also gluten-free and filled with lots of vegetables. To make this soup taste the very best, I recommend adding kalamata olives and making this soup using chicken thighs.
To make this delicious chicken gyro soup you will need:
One package of chicken thighs- you can also use chicken breast if you like.
Yukon gold potatoes
One small onion
One bag of fresh spinach
garlic- I keep this freeze-dried garlic in my fridge.
An Instant Pot
If you want, you can also garnish this soup with feta cheese, Greek Yogurt or Tzatziki Sauce.
Ingredients
- 1-2 pounds chicken thigh meat cut into pieces
- 3-4 Yukon gold potatoes
- 10 ounces fresh spinach
- 32 ounces chicken broth
- 1 small onion chopped
- 1 tablespoon lemon juice
- 1 teaspoon Greek seasoning
- 1 teaspoon oregano
- 1 teaspoon dillweed
- 1 teaspoon minced garlic
- 1 tablespoon olive oil
- kalamata olives
garnish ideas
- feta cheese
- Tzatziki sauce
- Greek Yogurt
Instructions

Pour olive oil on the bottom of your Instant Pot Pan and set it to the saute setting.

Add onions and garlic. Cook until the onions are translucent. Unplug Instant Pot.

Add oregano, dillweed, Greek seasoning, and lemon juice. Followed by chicken, potatoes, chicken broth, and spinach.

Stir the spinach into the broth.

Secure Instant Pot and Cook on high pressure for 15 minutes.

Let Naturally release. Add Kalamata Olives to each individual bowl right before eating.
This was such an amazing dish! I think it is imporant for you to encourage your family to add the kalamata olives to this soup. Kalamata olives are a flavor-packed ingredient that really takes this soup to the next level. If you like this soup, you should try my French Chicken Thighs as well.
