I have been searching for heartier baked goods to include in my middle school boys’ school lunches. In this process, I have discovered that granola gives cookies an incredible texture. My Cherry Granola cookies were a huge hit! Since I had some high-protein peanut butter granola in my pantry, I decided to make a peanut butter chocolate version of it. These cookies are packed with smooth peanut butter, melty chocolate chips, chewy coconut, and clusters of crunchy granola.
If you can’t find high-protein peanut butter granola at Walmart, I have also seen it at Aldi, Trader Joe’s, and Costco.
Ingredients needed
unsalted butter
1 large egg
All-purpose self-rising flour – You can also use regular all-purpose flour with 1/2 teaspoon of baking powder and 1/2 teaspoon of baking soda as an alternative.
salt
Great Value High Protein Peanut Butter Granola or another brand
chocolate chips (milk, dark, or semi-sweet)
Equipment
Cookie Sheet or Sheet Pan
Parchment Paper
Large Mixing Bowl or medium bowl
Cookie Scoop or Spoon
Cooling racks
Electric or stand mixer
Instructions:
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
- Beat in the egg and vanilla until smooth.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually stir in the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the oats, granola, and chocolate chips until evenly distributed.
- Scoop rounded tablespoons of dough and drop them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 9–11 minutes, or until the edges are golden and the centers are set.
- Let cookies cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
Tip: These cookies bake up slightly crisp around the edges with a chewy center. For extra crunch, sprinkle a few more pieces of granola on top before baking.
Store these cookies in an airtight container at room temperature for up to five days. You can also choose to store them in the refrigerator for a few days longer. You can also freeze them in an airtight freezer bag.
