This recipe was born out of a love for Door County cherries and the cozy texture of homemade granola.

You will love the tart cherries paired with the sweet, chewy coconut and the crunchy granola. This is the ideal snack or when you just need a sweet treat. Granola makes these cookies heartier and more satisfying than your typical oatmeal cookie.
Ingredients:
Unsalted butter, softened
Granulated sugar
Brown sugar, packed
1 large egg
Baking powder
Baking soda
Salt
Optional Ingredients: Chopped pecans or walnuts, raisins, and white chocolate chips.
What kind of granola should I use?
You should use your favorite granola that contains flavors that complement cherries well. Any cinnamon-based granola will work. Including nuts in the granola is a plus. Make sure that large granola clusters are broken down into smaller pieces.

An electric mixer or stand mixer with the paddle attachment

Instructions:
- Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter, sugar, and brown sugar until smooth and fluffy.
- Beat in the egg and vanilla until fully combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Slowly add the dry ingredients to the wet ingredients and stir until just combined.
- Fold in the oats, granola, cherries, coconut, and nuts if using.
- Scoop cookie dough onto the prepared baking sheet using a cookie scoop.
- Bake for 9 to 11 minutes, or until the edges are a perfect golden brown.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Store in an airtight container for up to 4 days.
