I have been playing around with many different cookie recipes this season. Because I always have a pot of coffee brewing, and I wanted to use it in my favorite white chocolate chip cookie recipe.  I love adding coffee to these cookies, but I was worried I wouldn’t achieve that chewy consistency.  If you want these cookies to be chewy, you must refrigerate your cookie dough for at least an hour.

It was tough not to eat all the cookie dough before baking these cookies.  The coffee flavor tasted amazing in these cookies!

How do you get your White Chocolate Coffee Cookies to be chewy?

In my opinion, the most important thing to get right when making white chocolate macadamia nut cookies is that the cookies turn out chewy.   The most important step to follow to make the cookie chewy is to chill the dough.  You should chill the cookie dough for at least an hour.  But if you don’t have the time, at least chill the dough for 30 minutes at the very least.

These Cookies call for mostly baking ingredients you already have in your pantry.  All you need is:

Butter

Pure Vanilla Extract

Brown Suger

White Sugar

1 egg

1 egg yolk

All-purpose Flour

Baking Soda

Salt

Coffee

Process matters when you make these cookies.  It is important to follow all the steps.  Especially chilling your dough.  Your cookies will turn out flat and spread out if you don’t chill your dough.
