Chewy White Chocolate Chip Coffee Cookies

These super chewy White Chocolate Chip Coffee Cookies are the afternoon pick-me-up you didn’t think you needed!  Adding 1/3 cup of coffee to chewy white chocolate cookies elevates them to the next level!  These creamy cookies are perfectly chewy and packed with white chocolate chips, and are laced with a delicious coffee flavor! I have been playing around with many different cookie recipes this season. Because I always have a pot of coffee brewing, and I wanted to use it in my favorite white chocolate chip cookie recipe.  I love adding coffee to these cookies, but I was worried I wouldn’t achieve that chewy consistency.  If you want these cookies to be chewy, you must refrigerate your cookie dough for at least an hour.

It was tough not to eat all the cookie dough before baking these cookies.  The coffee flavor tasted amazing in these cookies!

How do you get your White Chocolate Coffee Cookies to be chewy?

In my opinion, the most important thing to get right when making white chocolate macadamia nut cookies is that the cookies turn out chewy.   The most important step to follow to make the cookie chewy is to chill the dough.  You should chill the cookie dough for at least an hour.  But if you don’t have the time, at least chill the dough for 30 minutes at the very least. 

These Cookies call for mostly baking ingredients you already have in your pantry.  All you need is:

Butter

Pure Vanilla Extract

Brown Suger

White Sugar

1 egg

1 egg yolk

All-purpose Flour

Baking Soda

Salt

Coffee

Process matters when you make these cookies.  It is important to follow all the steps.  Especially chilling your dough.  Your cookies will turn out flat and spread out if you don’t chill your dough.

Chewy White Chocolate Chip Coffee Cookies

Ingredients

  • 1/2 softened butter
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 teaspoon pure vanilla extract
  • 1 egg
  • 1 egg yolk
  • 1/3 cup cold coffee
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup white chocolate chips

Instructions

  1. Using an electric mixer, cream butter, white sugar, brown sugar, vanilla, egg, egg yolk, and coffee

  2. In a separate bowl, whisk flour, baking soda, and salt.

  3. Slowly add dry ingredients to the wet ingredients while mixing.

  4. Add white chocolate chips and fold in

  5. Place cookie dough in a bowl and cover. Chill in the fridge for at least 1 hour.

  6. Preheat oven to 350 degrees.

  7. Line the baking sheet with parchment paper and place 1 inch balls of dough evenly on the baking sheet

  8. Cook for 10 minutes.

  9. Remove from oven. Let cool and serve.
