Strawberry Angel Food Cake Cookies

Cake Mix Cookies are fun to make when you are in a pinch but still want something delicious!  Cake Mix Cookies only require a box of cake mix and a few additional ingredients.     These cookies have a consistency similar to a macaroon.  These cookies are light, sweet, and refreshing. 

These Strawberry Cookies are such a sweet treat!  Just a few simple ingredients are needed to make these angel food cake cookies.  This might just be the most easy dessert recipes. This might just be the easiest cookie recipe ever!  Although most of my recipes are homemade, I have also been seeing ” Cake Mix Cookies” all over the interwebs lately and wanted to try them.   These Strawberry Angel Food Cake Cookies are made with fresh strawberries and are perfect for spring.   All you need is a few ingredients to make these, and they bake in just a few minutes.

These cake mix cookies can be made with any of your favorite fruits.  I would avoid adding extra added sugar to these cookies, though because otherwise, they might end up way too sweet.

What brand of Angel Food Cake Mix Can you use? 

Even though the size of cake mixes does vary from brand to brand, they’re all about 15 ounces and can work with this recipe. I used Pilsbury angel food baking mix in this recipe.

All you need for these Cookies are:

One package of  angel food Cake Mix. I used pillsbury

One tablespoon vegetable oil

1 teaspoon of pure vanilla extract

1/2 cup of water

1/2 cup of Fresh Strawberries

optional: white chocolate chips, powder sugar,

Equipment

stand mixer, electric or manual mixer

medium bowl

parchment paper or stick cooking spray

cooling rack

This is such an easy recipe to follow.  All you need to do is 

  1. Heat oven to 325 degrees and line baking sheets.
  2. Mix your cake mix, oil , water, and strawberries in a large bowl. Stir well.
  3. Using a Cookie Scoop, arrange the cookies evenly apart on a prepared baking sheet.
  4. Bake for 8-10 minutes.
  5. Cool the cookies completely before removing from the baking sheet.

Make Sure You Let the Cookies Cool – Making cookies out of cake mix can cause them to be a bit crumbly when they are still hot.  Make sure you let them cool because removing them too soon can cause them to break.

Cookies can be stored in an airtight container- but make sure they have completely cooled beforehand.

Storage: You can Freeze These Cookiesplace them in a freezer bag for up to four weeks.

Strawberry Angel Food Cake Mix Cookies

Ingredients

  • 1 15 ounce box Angel food Cake Mix
  • 1 tablespoon vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh diced strawberries
  • 1/2 cup water

Instructions

  1. Preheat oven to 325 degrees

  2. Line baking sheet with parchment paper.

  3. Mix together cake mix, water, oil, vanilla extract, and chopped strawberries

  4. Using a cookie Scoop line 1 inch balls of dough onto your cookie sheet.

  5. Cook them in the oven for 10-12 minutes.

  6. Remove them from the oven. Let them cool completely before removing them from the baking sheet.

These cookies are delicious!  I bet you can add all of your favorite fruits to this recipe!  These are the perfect summer treat or you can also make these for mothers day, easter or valentines day!  You might want to make more than one batch.  They wont last long!  Kids will love these pink cookies!
