Pepperoni Pizza Loaded Broccoli

I am going to piggyback from my recipe I posted a few weeks ago for loaded broccoli.   You see, when your children express their love for broccoli, you will forever be on the hunt for more broccoli implementation.  I have been on a broccoli rampage lately, and surely you didn’t think I was done with new broccoli recipes after I posted my broccoli salad round-up last week did you?

Anyway, a few weeks ago I posted this recipe for loaded broccoli, which is roasted broccoli topped with baked potato toppings.  Not only is this an excellent way for me to enjoy baked potato flavors without all the carbs, but it was also a great way to serve my kids’ broccoli.  ( it’s all about marketing!)    I can’t emphasize enough how delicious it was!    But that was a previous post on a different day.   Topping broccoli with pizza toppings might even be more delightful!

I had to make this dish a few times to get this just right.   The first time I made it, I roasted broccoli in the oven.  But this recipe turns out best when you use steamable frozen broccoli, and then add the toppings when you take the broccoli out of the microwave, and it is still piping hot.  The cheese melts right away, and the pizza sauce doesn’t make it too cold.

You don’t need to add the same pizza toppings as I did.   You can top your broccoli with the pizza toppings you like!  Pepperoni, olives, and mozzarella cheese happen to be the favorite pizza toppings in our house.

Out of all of the steamable microwavable broccoli out there, I prefer Great Value steamable florets or the steamable frozen broccoli from Aldi’s.

Pepperoni Pizza Loaded Broccoli

Ingredients

  • 2 12 ounce bags microwave steam fresh frozen broccoli
  • 1/4 cup pepperoni
  • 1/2 cup mozzarella cheese
  • 1/2 cup pizza sauce
  • 1 2.5 ounce can black olives

Instructions

  1. Steam the bags of broccoli in the microwave according to the instructions on the package.  

  2. Place the broccoli in a bowl, still hot and add the mozzarella cheese.  Let the cheese melt on the broccoli

  3. Toss the broccoli with pizza sauce, pepperoni, and olives.  

  4. Add any additional pizza toppings if you like. 

  5. Microwave for 1-2 minutes longer if you want to warm up the additional pizza toppings a bit. 

  6. eat!
