I didn’t realize until the holidays were over, how crazy the holiday season actually was. My family had a great Christmas, but I am finding myself more relaxed now that the holiday season is over. I have been finding more time lately to make and photograph a few of my favorite ” go to” recipes. One of those recipes are these EASY, four-ingredient pork tacos.
I came up with these last spring, probably because I needed to make something with the ingredients I had around the house. I don’t always have time to head out to the store to buy a bunch of ingredients for dinner. These turned out awesome. I love pulled pork in my Instant Pot. ( affiliate link) Don’t get me wrong, I also love my slow cooker, but I don’t think I will ever make pulled pork in my slow cooker ever again.

I used two cans of tomatoes in my recipe. One can of fire roasted tomatoes and one can of regular diced tomatoes. Seriously, use whatever you have in your pantry. It will turn out fine. This recipe is supposed to be easy, for busy people like you and me!
Instant Pot Pork Tacos
- 1 2-3 pound pork roast
- 2 16 ounce cans diced tomatoes
- 1 packet taco seasoning
- 2 tablespoons olive oil
Set your Instant Pot to saute.
Add olive oil and pork roast. Seer ever so slightly on each side of the pork roast.
Add tomatoes and taco seasoning.
Set your Instant Pot to high pressure or onto the meat setting.
Cook for 90 minutes.
When the cook time is over, use a fork to pull apart the meat. The meat should pull right apart and should be really tender.
You can seriously add any toppings you like to these tacos. This meat will last my family several days, and we might make some different meals with this. Salads, sandwiches, casseroles, pizzas.
