I am still searching for cookie recipes for my teenage athlete, who has a sweet tooth.  These Protein Pancake/ Waffle Mix Chocolate Chip Cookies are fluffy, chewy, and full of chocolate.

You only need one bowl and simple pantry ingredients to make these cookies in minutes.  These cookies are a delicious way to refuel after a long day or a workout.

What is high-protein Pancake Mix, and where do I find it?

Protein pancake mix is essentially a ready-to-use dry mix that combines flour and protein powder. Most brands include added whey protein or plant-based protein.  This is the perfect cookie if you are looking for a delicious, chewy treat that still fits into your daily protein quota.

Where to Find Protein Pancake Mix

  • Trader Joe’s: Trader Joe’s often stocks a protein pancake mix under their private label, usually near the baking mixes or cereal aisle. It’s typically a good value and has a balanced flavor that works well in both cookies and pancakes.
  • Aldi: Aldi also carries affordable protein pancake mixes in their baking or cereal section. They sometimes rotate different brands or sell their own store brand version, and it’s one of the most affordable ways to obtain a protein mix.

Ingredients

Protein pancake mix

Baking soda

Salt

Unsalted butter, softened

Brown sugar, packed

Granulated sugar

Large egg

Vanilla extract

Chocolate chips

Optional Add-Ins: Peanut Butter, Almond Butter, Nuts, dried fruit such as raisins or craisins.

Equipment:

Sheet Pan or Cookie sheet

Parchment Paper 

Cookie Scoop or spoon

Stand or Electric Hand Mixer

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the pancake mix, baking soda, and salt.
  3. In a large bowl, cream together the butter, brown sugar, and granulated sugar until fluffy.
  4. Beat in the egg and vanilla.
  5. Gradually add the dry ingredients, mixing just until combined.
  6. Fold in chocolate chips.
  7. Scoop cookie dough onto the prepared baking sheet.
  8. Bake 10-12  minutes, until edges are lightly golden.
  9. Cool on the sheet for 2 minutes before moving to a wire rack.

Storage: You can store leftover cookies at room temperature in an airtight container for up to five days.

  • 1/2 cup Unsalted Butter
  • 1/2 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 1 Teaspoon Vanilla Extract
  • 1 3/4 Cups Protein Pancake Mix
  • 1/4 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 cup Mini Chocolate Chips

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.

  2. In a mixing bowl, cream together butter, granulated sugar, and brown sugar until smooth.

  3. Beat in the egg and vanilla extract.

  4. Stir in the protein pancake mix, baking soda, and salt until combined.

  5. Fold in the mini chocolate chips.

  6. Drop rounded spoonfuls of dough onto the baking sheet.

  7. Bake for 9–11 minutes, or until edges are lightly golden.

  8. Allow cookies to cool on the sheet for 2 minutes before transferring to a wire rack.
