Pumpkin Marble Chocolate Chip Cookies

Pumpkin marble chocolate chip cookies are the perfect fall cookie recipe,  with swirls of cozy spice and chocolate. 

Fall is for staying cozy, and it’s the perfect time to bake a new pumpkin spice-flavored cookie recipe.  These marble pumpkin chocolate chip cookies are the perfect treat to make this fall! You’ll love how the melty chocolate chips and chocolate cookie dough pair with the pumpkin!  These cookies have a fantastic flavor and texture!

Ingredients

Unsalted butter, softened

Brown sugar

Granulated sugar

large egg

Pure vanilla extract

All-purpose flour

Cornstarch

Baking soda

Salt

Chocolate Chips

Canned Pumpkin- ( not pumpkin pie filling)

Cocoa Powder 

Ground cinnamon

Optional ingredients: You can switch things up by adding nuts, such as pecans or walnuts, to this recipe.  You can also substitute white chocolate chips or add sea salt to the top of each cookie.

Equipment Needed

Oven

2 Mixing bowls. One large batch of the base cookie dough and a smaller one for when you separate the two doughs.

Baking sheet 

Parchment paper or a silicone baking mat 

electric hand mixer

Cooling rack 

Cookie scoop

Storage Instructions: Store in an airtight container at room temperature for up to five days.  You can also store the cookies in the freezer.

Pumpkin Chocolate Chip Cookies

Ingredients

  • 1 cup Butter, softened Two sticks of butter
  • 1 cup Brown sugar
  • 1/2 cup Granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 tablespoons cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1.5 cups semi-sweet chocolate chips

Pumpkin Cookie Dough

  • 1/3 cup canned pumpkin
  • 1 teaspoon cinnamon

Chocolate Cookie Dough

  • 2 tablespoons unsweetened cocoa powder

Instructions

Make the base cookie dough

  1. In a large bowl, mix brown sugar, and granulated sugar until smooth.

  2. Add egg and vanilla, and mix until combined.

  3. Stir in flour, cornstarch, baking soda, and salt until a soft dough forms.

  4. Add chocolate chips.

Divide the cookie dough evenly into two bowls

  1. Add pumpkin puree to the pumpkin half.

  2. Add cocoa powder to the chocolate half.

Marble the Cookies

  1. Using a cookie scoop, layer the two flavors of cookie dough in the scoop and drop the cooke dough onto a prepared baking sheet.

  2. Bake at 350 degrees for 10-12 minutes, or until the edges are golden brown.

  3. Let the cookies cool for at least 5 minutes before transferring the cookies to a wire cooling rack.

  4. Serve.
