A Classic Scotcheroos is a no-bake dessert made with Rice Krispies cereal, peanut butter, and a melted mixture of corn syrup and sugar. It is usually topped with melted chocolate and butterscotch chips. Scotcharoos are chewy, sweet, and easy to make! You will love this upgrade!
The original Scotcheroo recipe was printed on the back of a Rice Krispies box in the 1960s and has been a staple in the Midwest ever since. Since moving to Iowa as an adult, I started spotting Scotcheroos at potlucks and sold them in all the local grocery store bakeries. They seem similar to Rice Krispies treats, but the recipe does not call for marshmallows.

Butter Pecan Scotcheroos
These Butter Peacan Scotcheroos give this nostalgic dessert a slightly grown-up, gourmet upgrade.
Ingredients
- 3 cups crispy rice cereal
- 1/2 cup toasted pecan pieces
- 1/3 cup light corn syrup
- 1/3 cup brown sugar
- 1/3 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 1 teaspoon butter extract
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup butterscotch chocolate chips
Instructions

Line a 8x8 baking dish with parchment paper. Set aside.

Mix Crispy Rice Cereal and chopped pecans.

In a saucepan, heat corn syrup and brown sugar together until the mixture starts to bubble. Remove from heat.

Stir in peanut butter, vanilla extract, and butter extract until smooth.

Stir in crispy rice cereal and mix until the cereal is completely coated.

Press into the 8x8 pan.

In a small saucepan or microwave-safe bowl, melt the butterscotch chips and chocolate chips together in 30-second increments until smooth.

Spread the chocolate mixture over the bars and cool completely before cutting into the bars and serving.
