My oatmeal cherry pie bars are made with a buttery oatmeal crumble and tart cherry pie filling. This recipe is easy to make, and the flavors complement each other!
These oatmeal cherry bars will become one of your favorite desserts! I like to use cherry pie filling made in Door County, but you can use any store-bought pie filling, and it doesn’t need to be cherry. You will love the various textures of the oatmeal, paired with its buttery flavor and the tart cherry filling.
These pie bars are straightforward to make and are perfect for summer holidays, Christmas, or Thanksgiving.
Ingredients needed
vanilla extract or almond extract ( optional)

Recipe Note: You can use gluten-free flour and certified gluten-free oats if you like to make these gluten-free.
Recipe note: both sweet cherry filling and cherry filling made with sour or tart cherries will work with this recipe.

8X8 Baking Pan or Baking Dish
Instructions
1. Preheat oven to 350 degrees. Line an 8×8 baking pan with parchment paper.
2. In a medium bowl, mix the dry ingredients. Oats, flour, brown sugar, baking soda, and salt.
3. Add slices of cold butter and mix until the butter and dry ingredients form coarse crumbs.
4. Press 2/3 of the oatmeal dough into your prepared baking pan.
5. Pour cherry pie filling over the oatmeal crust.
6. Crumble the remaining 1/3 of the oatmeal dough over the cherry pie filling.
7. Bake in the oven for 26-30 minutes. You will want the crust and crumble to be golden brown when you remove it from the oven.
8. Let the pie bars cool before removing from the pan. You can use the edges of the parchment paper to pull them out of the pan.
Storage Instructions
Cover with plastic wrap and store in the refrigerator in an airtight container for up to 5 days. You can also freeze them.

- 1 cup Old-Fashioned Oats
- 3/4 cup All-Purpose Flour
- 1/3 cup Brown Sugar
- 1 teaspoon cinnamon optional
- 1/4 teaspoon Baking Soda
- 1/4 teaspoon Salt
- 1 cup Unsalted Butter Two sticks of cold butter, cut into slices.
- 1.5 cups Cherry Pie Filling
