Preheat oven to 350 degrees. Line an 8x8 baking pan with parchment paper.
In a medium bowl, mix the dry ingredients- Oats, flour, brown sugar, baking soda, and salt.
Add slices of cold butter and mix until the butter and dry ingredients form coarse crumbs. You will want to use a pastry cutter or an electric mixer for this step.
Press 2/3 of the oatmeal dough into your prepared baking pan.
Pour cherry pie filling over the oatmeal crust.
Crumble the remaining 1/3 of the oatmeal dough over the cherry pie filling.
Bake in the oven for 26-30 minutes. You will want the crust and crumble to be golden brown when you remove it from the oven.
Let the pie bars cool before removing from the pan. You can use the edges of the parchment paper to pull them out of the pan.
