Peach Blondies

Enjoy a slice of summer with these delicious and easy Peach Pie Blondies, which taste like fresh peach pie!

Nothing is like a fresh, homemade peach pie with a scoop of vanilla ice cream on a hot summer day. These peach blondies are the next best thing. This recipe calls for canned peaches, but you can substitute fresh peaches if they are in season! They are easy to make and bring with you to any summer party!

This recipe works: This recipe works because the blondies turn out chewy and taste delicious with the peaches!

Ingredients:

1/2 cup (1 stick) unsalted butter, melted

1 cup light brown sugar, packed

One large egg

One teaspoon of vanilla extract

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup canned diced peaches, drained well

optional ingredients: 1/2 cup of pecans, vanilla ice cream, whipped cream frosting, or simple caramel sauce.

Equipment

8×8 baking dish

nonstick cooking spray or parchment paper

whisk, electric mixer, or stand mixer

Instructions:

Preheat the oven to 350°F. Grease and flour an 8×8-inch baking pan or line it with parchment paper.

Whisk the melted butter and brown sugar in a mixing bowl until well combined. Add the egg and vanilla extract and continue to whisk until smooth. If you are using a stand mixer, use medium speed.

Sift the flour, baking powder, and salt in a separate bowl.

Gradually add the flour mixture to the wet ingredient mixture until just combined. Be careful not to overmix.

Gently fold the drained diced peaches and stir, ensuring they are evenly distributed throughout the batter.

Pour the batter into the prepared baking pan and spread it out evenly. Place the pan in the preheated oven and bake for 25-30 minutes, until the edges are golden brown and a toothpick inserted into the center comes clean.

Allow the peach blondies to cool in the pan for 10-15 minutes before slicing them into squares using a butter knife. Serve warm or at room temperature. Enjoy your delicious peach blondies!
