Instant Pot Cheesy Ham and Peas Gnocchi Casserole

Gnocchi is a very versatile gluten-free dinner ingredient with a super short Instant Pot cook time!  You need a few pantry ingredients and a few minutes to make this savory and mouthwatering meal for your family.  The pressure cook time for this recipe is just one minute! You can use the sauté function on your Instant Pot to saute the onions beforehand, saving you time and saving you from extra dishes!

Welcome to my life Cheesy Gnocchi Casserole!   My Instant Pot Tortellini and Peas is one of the fastest dinners one can make in the Instant Pot, and I wanted to make something similar but with gnocchi.   Potato Gnocchi is a wonderful ingredient for pasta dishes, and cauliflower gnocchi works well with most gnocchi recipes.  Gnocchi is found in the pasta aisle in your grocery store.  You can whip up this casserole in your Instant Pot in no time.

When you cook pasta in your Instant Pot

  • Have 4 cups of liquid ( water broth etc.) 
  • Pressure Cook the pasta for 1/2 the time the directions on the package of pasta called for.
  • Make sure to stir the pasta before pressure cooking it- and make sure no food is stuck to the bottom of the pan
  • Make sure the pasta is completely submerged in liquid- even if that means adding some extra water or broth. 

Ingredients Needed

Two tablespoons of butter or olive oil

One small onion, chopped

One teaspoon thyme

dash of salt and pepper

3/4 cup of chopped ham – deli ham or leftover ham will work great

1 cup of frozen peas

Two 16-ounce containers of gnocchi – found in the pasta aisle of your grocery store.

One can of Campbell’s cheddar cheese soup

1 1/2 cups of chicken broth

1 cup of water

1/3 cup of heavy cream

Optional Add-Ins- carrots, celery,  cooked chicken, baby spinach, 1-2 cloves garlic, and other vegetables you like.  You can also add additional cheese like parmesan cheese or gouda.  If you have a spice or an herb you like, I encourage you to add it!  Herbs de Provence or a bay leaf would taste delicious in this recipe.

Can I make this meal without using the condensed soup?

Yes!  If you want to omit the soup, add 1/2 more water or broth and stir in 1 cup of shredded cheddar cheese to the gnocchi after the pressure cooking process when your food is still piping hot.

Equipment

Instant Pot or Pressure Cooker

Wooden Spoon

Large bow or casserole dish for serving.

Instructions

1. Set your Instant Pot to the sauté function by pressing the saute button.   Add butter, chopped onions, thyme, salt, and pepper.  Saute onions until they are transparent and the butter is bubbly.

2. Press cancel to stop the pot from sautéing further.

3. Make sure no food is sticking to the bottom of the pot before adding additional ingredients.

3. Add ham, Peas, cheddar cheese soup, chicken broth, water, and heavy cream to your pot.

4. Close and secure the Instant Pot Lid.  Rotate the pressure release valve to the sealing position.

5. Cook on high pressure on a manual for 1 minute.  You will want to hit the pressure cook button on your pot.  Immediately release the pressure after the cooking process has been completed.

6. Stir the meal and serve while it is still piping hot.

A bowl of this gnocchi has a huge flavor and will satisfy your taste buds!

Recipe variations

* There are many popular recipes for Instant Pot Gnocchi Soups, similar to the soup at Olive Garden.  You can add more chicken broth to make this into soup.

* You can substitute the ham with cooked chicken breasts to make this a chicken casserole.

* You can spice this recipe up by adding jalapeno peppers or topping it with red pepper flakes.

Storage:  Store in an airtight container in the fridge for up to five days.
