Banana muffins with Captain Crunch streusel are the perfect combination of soft, fluffy texture and sweet, crunchy topping. These bakery-style muffins are full of flavor and fun.

There is something instantly nostalgic about Cap’n Crunch cereal. It brings you right back to being a kid, pouring a big bowl on a slow morning and enjoying that unmistakable crunch. This iconic cereal was created by the Quaker Oats Company in Cedar Rapids, Iowa, making it even more fun to bake into something homemade and comforting.

These banana muffins take everything you love about classic muffin recipes and give them a playful twist. The batter is rich with ripe bananas, brown sugar, and melted butter, creating a soft and moist bite every time. The streusel topping adds the perfect crunch, and you can easily mix in chocolate chips or walnut pieces for extra flavor, protein, and fiber. Whether you are baking for your family, a brunch, or to satisfy a sweet tooth, these muffins come together with simple steps and deliver big flavor.

Instructions

  1. Preheat oven to 375 degrees and line a muffin tin with muffin liners.
  2. In a large bowl, mash bananas until smooth. Melt the butter, then whisk in the brown sugar and white sugar until combined.
  3. Add eggs, vanilla, and sour cream. Mix the wet ingredients until smooth.
  4. In a separate bowl, whisk together the dry ingredients, including all-purpose flour, baking soda, baking powder, cinnamon, and salt.
  5. Add the dry ingredients to the wet ingredients and stir gently to form the batter. Avoid overmixing to keep a fluffy texture.
  6. Fold in any add-ins, such as chocolate chips or walnut pieces, if desired.
  7. In another bowl, make the streusel by combining crushed cereal, brown sugar, flour, cinnamon, and cold unsalted butter until crumbly.
  8. Fill each muffin liner almost to the top so the muffins bake up tall in the muffin pan.
  9. Sprinkle the streusel generously over each muffin and gently press it into the batter.
  10. Bake for 5 minutes, then reduce the oven temperature to 350 degrees and continue baking for 13 to 16 minutes, or until a toothpick inserted in the center comes out clean.

Storage Instructions

Store muffins in an airtight container at room temperature for up to 3 days. You can also refrigerate them to extend their shelf life. To reheat, place a muffin in the microwave for about 10 to 15 seconds to restore its warm, fresh-from-the-oven texture. Each bite will still have that soft center with a slight crunch from the streusel on top.
