Orange Beef and Broccoli Egg Roll in a Bowl

Whenever I make myself an ” Egg Roll in a Bowl,” I think to myself, ” Why don’t I make this more?” Not only is this Orange Beef and Broccoli Egg Roll in a bowl delicious and satisfying, but also nourishing. With February being Heart Health month, this recipe is a great one to try. It is better for you than the traditional Orange Beef and Broccoli because:

  • Instead of using rice as the filler, I am using sauteed cabbage.
  • Instead of using sugar to sweeten the beef, I am sweetening it with freshly squeezed orange juice.
  • Instead of cooking with soy sauce, I am using coconut aminos
  • Instead of using sesame oil, I am using Mazola® Corn Oil.

This is a very filling and flavorful meal, and a great way to get a large serving of vegetables.   Egg Roll in a bowl was meant to be a low-carb take on a traditional egg roll.  However, I have had fun trying out new flavors at home.  This orange beef and broccoli might be my favorite one yet.  I bet you can get creative with this and turn your favorite Asian-inspired dish into an egg roll in a bowl!

I have included both stovetop and pressure cooker instructions for this recipe. Mazola® Corn Oil is appropriate for this recipe because it has a higher smoke point of 450 degrees, which is much higher than other oils.  This works out exceptionally well when cooking this recipe in a wok.  This high smoke point also works well for recipes on the grill.

Ingredients

  • 1-2 lbs Flank Steak cut into strips
  • 1/4 cup Mazola® Corn Oil
  • 1 small onion sliced
  • 1/4 cup coconut aminos you can also sub soy sauce or tamari
  • 1/4 cup beef broth you can sub water
  • 1 teaspoon ground ginger
  • 3-4 cloves minced garlic
  • 1/4 cup freshly squeezed orange juice
  • 1 12 ounce bag microwave steam fresh broccoli
  • 1 14 ounce bag coleslaw mix
  • 1-2 green onions, chopped garnish
  • orange zest garnish

Instructions

Stove Top Instructions

  1. Pour Mazola Corn oil into a heated wok or saucepan, along with onions, garlic, and beef.

  2. Pour in coconut aminos, ginger, orange juice, and beef broth. Cook together.

  3. Microwave your steam bag of broccoli. Add the broccoli with the beef once the beef is cooked.

  4. Add coleslaw mix, and turn the stove to lower heat, constantly stirring the mixture until the cabbage has cooked to the texture you prefer.

  5. garnish and serve.

Pressure Cooker Instructions

  1. Set your Pressure Cooker to the saute setting.

  2. Add Mazola Corn oil, garlic, onions, and beef. Saute until the onions are translucent.

  3. Add orange juice, ginger, coconut aminos, and beef broth.

  4. Place lid on the pressure cooker and cook on high pressure for 7-10 minutes depending on how thick you sliced your steak.

  5. Release pressure immediately.

  6. Set your pressure cooker to the saute setting again.

  7. Cook your bag of broccoli in the microwave.

  8. Add the broccoli and the coleslaw mix to your pot. Cook on saute until the cabbage is a texture you like.
