Olive Oil Brownies

These chewy olive oil brownies have a deep cocoa flavor and a soft, melt-in-your-mouth texture everyone will love. 

Olive oil brownies are rich, chocolatey, and incredibly moist, baked in a square baking pan for the perfect balance of textures. The edges turn perfectly chewy while the centers stay soft and fudgy. You still get those crinkly brownie tops everyone loves, even without butter. The olive oil gives them a smooth flavor and helps the brownies stay tender for days, making each bite a mix of chewy edge and gooey center.

Ingredients

1/2 cup olive oil
1 cup granulated sugar
1/2 cup packed brown sugar
2 large eggs
2 teaspoons vanilla extract
1/2 cup unsweetened cocoa powder
1/2 teaspoon salt
3/4 cup all-purpose flour
1/2 teaspoon baking powder
2 tablespoons hot coffee or hot water
1/2 cup chocolate chips or chunks, plus more for topping if desired

Additional optional ingredients

Walnuts or Pecans

Equipment Needed

8×8-inch baking pan lined with parchment paper

Large Bowl
Whisk
Rubber spatula or wooden spoon
Measuring cups and spoons
Parchment paper
Wire cooling rack
Sharp knife

Instructions

  1. Preheat the oven to 350 degrees and line an 8×8-inch pan with parchment paper or lightly grease it with olive oil.
  2. In a medium bowl, whisk together the olive oil, granulated sugar, and brown sugar until smooth.
  3. Add the eggs and vanilla and whisk for one to two minutes until the mixture looks creamy and slightly lighter in color.
  4. In a separate bowl, stir together the cocoa powder, salt, flour, and baking powder.
  5. Add the dry ingredients to the wet ingredients and mix just until combined
  6. Pour in the hot coffee or hot water to loosen the batter and stir gently until smooth
  7. Fold in the chocolate chips and spread the batter evenly into the prepared pan
  8. Sprinkle a few extra chocolate chips on top if desired
  9. Bake for 25 to 30 minutes until the center looks set and a toothpick comes out with moist crumbs
  10. Cool completely in the pan on a wire rack before slicing into squares.

Storage 

Room temperature:
Keep the brownies in an airtight container at room temperature for up to 3 days. Place a piece of parchment or wax paper between layers to prevent sticking. This keeps them soft, chewy, and easy to cut.

Refrigerator:
Store covered in the fridge for up to 5 days if you like a dense, fudgy texture. The cold air firms up the brownies slightly but makes them taste extra rich.

Freezer:
For more extended storage, wrap individual squares in plastic wrap and place them in a freezer-safe bag or container. Freeze for up to 2 months. Thaw at room temperature or warm slightly in the microwave for 10 to 15 seconds for that fresh-baked taste.
