Sheet Pan Chicken Gyros and Video Tutorial

Have I ever told you guys that I love Greek Food?

Oh yeah, I have.

Seriously though, last fall, I made these Slow Cooker Chicken Gyros.  And they were SOOOOO good!  But I wanted to try a chicken gyro dish that wouldn’t take all day to cook.

This dish is super fast!  ( not as fast as it shows in this video, but still really fast.)   I also made a homemade tzatziki sauce too.

These Chicken gyros are so flavorful.  I think the key to this amazing-tasting chicken is the Greek Seasoning.

This might be my favorite seasoning for chicken.

Sheet Pan Chicken Gyros 

Ingredients 

1 lb of chicken boneless chicken tenders

1 cup of greek yogurt

salt and pepper to taste

1 tablespoon of olive oil

1 tablespoon oregano

1 tablespoon of dried dill

juice of one lemon

1 tablespoon greek seasoning

1/2 chopped red onion

3 cloves of garlic, minced

1 lemon- sliced

Tzatziki Sauce 

1 1/2 cups of Greek Yogurt

juice from 1/2 a lemon

2 teaspoons of dill weed or fresh dill

1 clove of garlic – minced

sea salt to taste

Other Things you need for Gyros 

Pita Bread

Feta Cheese

Cucumbers

Lettuce

Tomatoes

Method:  On a Sheet Pan, arrange boneless chicken tenders and beat with a meat tenderizer.  Sprinkle the chicken with salt and pepper and drizzle with olive oil.  Plop Greek Yogurt over the chicken, followed by the seasonings, garlic and lemon juice.  stir the chicken with the Greek Yogurt and seasonings.  Add onions and lemon slices to the sheet pan.  Cook in the oven at 350 for 20 minutes.  Remove from oven.  Place chicken in pita bread and garnish to your taste.

I love these chicken gyros!  They’re so good!   I think the most important part of this chicken is to make sure you beat it really good with the meat tenderizer.   These won’t turn out nearly as good, if the chicken is tough.

what is the mat that you have on the sheet pan under the food. Please explain why and how it works.
