Pineapple Poppy seed Bread

If you love Pineapple, you will love this sweet and fluffy pineapple poppyseed bread!  This bread is bright, sweet, and topped with the perfect pineapple glaze!

Ingredients

  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 4 tsp poppy seeds
  • 1.5 cups crushed pineapple don't drain juice
  • 3/4 cup sugar
  • 2 eggs
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 2 tbsp whole milk

Pineapple Glaze

  • 1/2 cup powdered sugar
  • 2 tbsp pineapple juice

Instructions

  1. Preheat oven to 350 degrees. Spray your loaf pan with cooking spray.

  2. Stir dry ingredients: flour, baking soda, baking powder, salt, and poppy seeds.  Set aside.

  3. Mix egg, sugar, oil, milk, vanilla, and pineapple.

  4. Add flour mixture to the wet ingredients and mix them into a batter.

  5. Pour batter into a greased four by 9-inch loaf pan.

  6. Bake in the oven for 45 minutes.  Ensure a toothpick comes out clean to ensure the bread is ready before removing it from the oven.

  7. Make Glaze.  Whisk pineapple juice with powdered sugar.

  8. Poke holes in the loaf and pour the glaze over the bread while it is still warm.  This will help the glaze seep into the bread.

  9. Ensure the loaf is completely cooled before removing it from the pan and cutting it into slices to serve.
