Minted Carrots

This sweet minted carrot recipe is an easy side dish to whip up any time of the year.  This budget-friendly recipe is easy to make and will complement your main dish.

Ingredients

  • 10-12 Whole medium carrots about 2 pounds
  • 1/4 cup butter
  • 2 tablespoons sugar
  • 1 tablespoons dry mint
  • 1/2 teaspoon salt and pepper
  • 1/4 cup chicken broth

Instructions

  1. Peel and chop carrots into 1/2-inch diagonal chunks.

  2. Saute carrots in melted butter in an 8- to 10-inch small saucepan over moderate heat until coated, about 2-3 minutes.

  3. Sprinkle with Sugar, mint, and salt, and stir until the sugar melts.

  4. Add chicken broth, cover, and simmer for 30 minutes or until carrots are tender, stirring occasionally.

  5. Remove carrots to a serving platter and place them in a serving bowl.

  6. Turn heat high and cook pan juices, constantly stirring, until thick and syrupy; pour over carrots.

  7. Serve.
