Ingredients

  • 2 pounds boneless chicken breasts
  • 2 teaspoons minced garlic
  • 1 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon oregano
  • 1 teaspoon dried dill
  • 1 tablespoon greek seasoning
  • 1 red onion sliced
  • 3 cups chicken broth or water

Instructions

  1. In the Instant Pot, combine chicken, olive oil, garlic, lemon juice, red wine vinegar, oregano, dill, Greek seasoning, and onion. Pour in chicken broth or water.

  2. Close and lock the Instant Pot lid. Set the valve to "Sealing." Pressure Cook on high pressure for 15 minutes.

  3. Allow the pressure to release naturally for 10 minutes. Then, carefully turn the valve to "Venting" to release any remaining pressure. 1

  4. Once the pressure has fully released, carefully open the lid. Remove the chicken to a cutting board and shred it using two forks.

  5. Serve the shredded chicken in warm pita bread with your favorite toppings, such as sliced cucumbers, tomatoes, red onion, and tzatziki sauce.
