If you have ever had funeral potatoes during bereavement or otherwise, you will love this funeral chicken bake, which is a funeral potato upgraded to a chicken casserole!
Preheat your oven to 350°F. Grease a 9x13-inch baking dish with cooking spray.
In a large bowl, combine the shredded chicken, potatoes, condensed cream of chicken soup, sour cream, chopped onion, and 1 cup of shredded cheddar cheese. Season with salt and pepper to taste. Mix until well combined.
Spread the chicken and potato mixture evenly into the prepared baking dish.
Stir the melted butter with the crushed cornflakes in a separate bowl until well-coated.
Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the chicken and potato mixture in the baking pan.
Spread the buttered cornflake mixture over the top of the cheese layer, covering the entire surface.
Bake in the preheated oven for 35-40 minutes until the casserole is bubbly and the top is golden brown and crispy.
Remove the casserole from the oven and let it cool for a few minutes before serving.
