French Toast Cookies

Love the warm, cozy flavors of French toast? These French toast cookies are like breakfast and dessert rolled into one! These cookies have a cozy cinnamon-maple flavor that tastes like breakfast!

Ingredients

  • 1/2 cup butter, softened
  • 1/4 cup cream cheese
  • 1/2 cup brown sugar
  • 2 tbsp granulates sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup maple syrup
  • 1 egg
  • 1 egg yolk
  • 1 1/3 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup cinnamon sugar
  • 1/4 cup powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat.

  2. Cream butter and cream cheese together in a large bowl using a hand mixer or stand mixer on medium speed until smooth and fluffy.

  3. Add the sugars (brown and granulated), and beat until light and creamy.

  4. Mix in the maple syrup, egg, and vanilla extract until fully incorporated. The batter may look slightly curdled at this stage.

  5. In a separate bowl, whisk together flour, baking soda, baking powder, salt, and nutmeg.

  6. Gradually add the dry ingredients to the wet ingredients, mixing just until no dry streaks remain. Don’t overmix.

  7. Scoop dough into balls and place them 2 inches apart on the prepared baking sheet.

  8. Bake for 10–12 minutes, or until the edges are set and golden brown. The centers may look a little soft.

  9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
