Cheddar Bay Biscuit Egg Bake

Cheddar Bay biscuits from Red Lobster are the perfect combination of cheesy, buttery, and savory.  Your family will go crazy over this easy and inexpensive Cheddar Bay Egg Breakfast Casserole

Servings 8

Ingredients

  • 1 cup diced ham or another breakfast meat
  • 1/4 cup diced onion
  • 2 tablespoons minced garlic
  • 1 teaspoon Cajun seasoning
  • 12 large eggs
  • salt and pepper
  • 1/2 cup whole milk
  • 1 Package Red Lobster Cheddar Bay Biscuit Mix
  • 2/3 cup water
  • 1/4 cup melted butter

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F. Grease a 9x13-inch  baking dish with cooking spray.

  2. Saute onions, ham, garlic and seasonings.  Set aside

  3. Prepare the Biscuit Mix: In a mixing bowl, prepare the Cheddar Bay biscuit mix according to the package instructions. Usually, you'll need to add water and the sharp cheddar cheese to the mix.  Set aside biscuit dough.

  4. Prepare the Egg Mixture: In another bowl, whisk together the eggs, milk, salt, pepper, Cajun seasoning, ham, garlic, and onions. Until well combined.

  5. Assemble Casserole.   In a casserole dish sprayed with cooking spray, pour the egg mixture.  Drop the biscuit mix onto the casserole using a cookie scoop. 

  6. Bake for 30 minutes.  After 15 minutes. Mix the seasoning mix with melted butter and brush the butter mixture over the tops of the biscuits.  Return the casserole to the oven to bake for the remaining time until the top is golden brown.
