Funfetti Shortbread Cookies

This melt-in-your-mouth funfetti shortbread cookie is easy to make and is perfect for dunking in a hot cup of coffee or a cold glass of milk!

Servings 12 cookies

Ingredients

  • 1/2 cup softened butter
  • 1/4 cup sugar
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup flour

Instructions

  1.  Preheat oven to 350 degrees.  Line a baking sheet with parchment paper.

  2. In a large bowl, cream together the butter, granulated sugar, powdered sugar, and vanilla extract until light and fluffy.

  3. Gradually add the flour and salt, mixing until just combined. Fold in the sprinkles.

  4. Shape the dough into a disk, wrap it in plastic wrap, and chill dough for at least 30 minutes.

  5. Using a cookie scoop, make the dough 1 inch apart on a baking sheet and press down with the tines of a fork.

  6. Place the cookies on the prepared baking sheet and bake for 10-12 minutes or until the edges are golden brown.

  7. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
