Toffee Coconut Blondies

This toffee coconut blondie is inspired by the one you can find at Disney's Hollywood studios.  Coconut makes these cookie bars chewy and pairs well with the flavor of the gooey toffee.  

Ingredients

  • 1 cup Unsalted butter, melted
  • 1.5 cups packed light brown sugar
  • 1 tablespoon vanilla
  • 2 large eggs
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 8 ounces toffee pieces
  • 1 cup flaked coconut

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.

  2. Cream the butter and brown sugar in a large bowl until light and fluffy. Beat in the eggs, then stir in the vanilla.

  3. In a separate bowl, whisk together the flour and baking powder. Gradually add the dry and wet ingredients, mixing until just combined. Stir in the toffee bits, coconut, and pecans.

  4. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely before cutting into bars.
