Pop Rocks Cream Cheese Mints

If you like cream cheese mints, you will love this festive version for the 4th of July!  These cream cheese mints are coated with pop rocks and will be so much fun to eat!

Ingredients

  • 4 ounces softened cream cheese
  • 1 tablespoon softened butter
  • 4 cups powdered sugar  added one at a time.
  • 1/2 teaspoon peppermint extract
  • Strawberry and Blue Raspberry Pop Rocks Candy

Instructions

  1. In a large bowl, cream the cream cheese and butter until smooth.

  2. Gradually add the powdered sugar, mixing until well combined.  You will want a dough-like texture.  You can do this by hand or with an electric mixer. 

  3. Stir in the peppermint extract.

  4. Roll the mint mixture dough into small balls and place them on a baking sheet lined with parchment paper.

  5. Press down the rolled ball with the tines of a fork.  

  6. Carefully place pop rocks candy on top of each cream cheese mint.

  7. Chill in the refrigerator for at least an hour.
