In a skillet, over medium heat add olive oil, shallots, pears, and Smithfield All Natural Boneless Pork Chops. Cook until shallots are translucent.
Add 1/2 cup of water to your pan if your pears are under-ripe. Adding water will help cook them down.
Cook on medium until your pork chops have reached an internal temperature of 145 degrees. Remove from the heat and let the pork chops rest for 10 minutes.
Build your sandwich. Spread some fig jam on your ciabatta roll. Add your pork chop, a few pears and a slice of gouda cheese. Eat immediately!
