Autumn Pork Chop Sandwich with Pears and Fig Jam

Here we are, exactly 12 days away from the start of school, and I finally decided to try to organize the kids a bit before school.  I have organized their closets, and I made that dreaded trip with the kids to the store for school supply shopping, and, I currently am meal planning a bit, in preparation for those busy fall nights.

And because we are in a new town this year, we are signing up for more activities than usual.  We want our kids to get acclimated and to meet friends at school.  Our weeknights are going to be busy this fall.  Having a few meals put away for those said busy nights can be a lifesaver.  In addition to freezing meals, I also like to sometimes, make dinner in the morning and then reheat it at supper time.

These Autumn pork chop sandwiches are easy to make-ahead.  These pork chop sandwiches are delicious as they are easy, and have the perfect festive autumn flair that you’re looking for during this back-to-school season!

I think that pork is lovely for autumn time because of pork pairs wonderfull with so many fall flavors.  Apples, cranberries, pears, and figs to think of a few.  These fall pork chop sandwiches have sauteed pears, shallots and are finished off with fig jam!   I cooked these pork chops stovetop in a matter of minutes!

I suggest using underripe pears in this recipe.  Once you cook the pears down, they will be flavorful and soft for your sandwich.   This sandwich is the perfect combination of sweet and savory, and not to mention kid-friendly.  All three of my sons gobbled up these pork chop sandwiches!

Autumn Pork Chop Sandwiches

Ingredients

  • 5 Smithfield® All Natural Boneless Pork Chops
  • 2 Green Anjou pears, sliced
  • 2 shallots, chopped
  • 1 tablespoon olive oil
  • 1/2 cup water

Sandwich Ingredients

  • 5 ciabatta rolls
  • 5 slices gouda cheese
  • lettuce
  • fig jam

Instructions

  1. In a skillet, over medium heat add olive oil, shallots, pears, and Smithfield All Natural Boneless Pork Chops.  Cook until shallots are translucent. 

  2. Add 1/2 cup of water to your pan if your pears are under-ripe.  Adding water will help cook them down. 

  3. Cook on medium until your pork chops have reached an internal temperature of 145 degrees.  Remove from the heat and let the pork chops rest for 10 minutes. 

  4. Build your sandwich.  Spread some fig jam on your ciabatta roll.  Add your pork chop, a few pears and a slice of gouda cheese. Eat immediately!
