Preheat oven to 375 degrees f.  line or spray baking sheets. In a bowl, whisk together dry ingredients.  Flour, baking soda, cornstarch, and salt.  Set aside.

Using a cookie scoop, drop 1-inch balls onto your baking sheet at least one inch apart. Bake in the oven for 10 minutes.

You can store these cookies in the refrigerator for up to five days. Please be mindful of what fruit you are adding because some fruits, like apple slices, will brown if you make the cookies too far in advance.
