tomato-less chili

Ingredients

  • 2 tablespoons olive oil
  • 1/3 cup chopped celery
  • 1/3 cup chopped carrots
  • 1/2 cup chopped sweet peppers
  • 1 teaspoon minced garlic
  • 1/8 cup chopped green onions
  • 1 16 ounce bag frozen corn
  • 1 can kidney beans
  • 1 can black beans
  • 1 pound ground beef
  • 1 tablespoon chili powder
  • 1 tablespoon onion powder
  • 1/2 tablespoon smoked paprika
  • 1 tablespoon oregano
  • 2 cups water

Instructions

  1. Turn your pressure cooker to the saute setting.

  2. Add olive oil, celery, carrots, peppers, and green onions. Saute vegetables in the olive oil. 

  3. Add ground beef to the pan and brown the meat slightly. 

  4. Add beans, garlic, corn, and spices to the pressure cooker pan. 

  5. Add water to the pot. 

  6. Close pressure cooker lid and cook on high pressure for 15 minutes

  7. Vent.  and saute for 4-5 extra minutes in order for the chili to thicken. 

  8. Serve!

Slow Cooker Instructions

  1. In a medium saucepan add olive oil, celery, carrots, peppers, and green onions. Saute vegetables in olive oil. Add to slow cooker

  2. Saute ground beef. Drain and add to slow cooker.

  3. Add the remaining ingredients

  4. Slow cook for 4-6 hours.
