Cherry White Chocolate Chip Cookie Bars

These cherry white chocolate chip cookie bars are soft, gooey, and full of sweet cherries and melty white chocolate, making them the best treat for the holidays or any day.

Ingredients

  • 1/2 cup butter melted and cooled
  • 1 cup packed brown sugar
  • l large egg
  • 2 teaspoons pure vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 tbsp cornstarch
  • 3/4 cup white chocolate chips
  • 3/4 cup dried cherries

Instructions

  1. Heat oven to 350 degrees and line an 8x8 pan with parchment paper.

  2. Melt the butter and let it cool for a couple of minutes.

  3. Whisk in the brown sugar and cream until glossy and smooth.

  4. Mix in the egg and vanilla.

  5. Add the dry ingredients, including flour, baking powder, cornstarch, and salt, and stir until just combined.

  6. Fold in the white chocolate chips into the cookie dough.

  7. Gently fold in the cherries. If using pie filling, scoop out the cherry pieces while leaving most of the filling behind so the bars stay soft.

  8. Spread the batter into the pan.

  9. Bake 22 to 26 minutes. The edges should be lightly golden, and the center should look set but still soft. A slight jiggle is fine.

  10. Cool at least 30 minutes before cutting.
