Buttermilk Pancake Bread

This buttermilk pancake quick bread is super easy to make and tastes like a buttermilk pancake with maple syrup.   This easy make-ahead recipe travels well and is a fun way to switch up your breakfast routine! 

Ingredients

  • 1.5 cups all-purpose flour
  • 1/2 cup granulated sugar
  • one teaspoon baking soda
  • 1/2 teaspoon salt
  • One large egg
  • One cup buttermilk
  • 1/3 cup vegetable oil
  • 1/2 cup maple syrup
  • One teaspoon vanilla extract

Topping

  • 2 tablespoons melted butter
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon

Instructions

  1. 1. Preheat oven to 350 degrees f

  2. In a large bowl, Mix dry ingredients. Flour, baking soda, salt, and sugar.

  3. Add wet ingredients.  Vegetable oil, egg, buttermilk, maple syrup, and vanilla.

  4. Mix well with a hand mixer or a whisk until a batter is formed.

  5. Pour the batter mixture into a loaf pan lined with cooking spray or parchment paper.

  6.  Prepare the topping. Mix melted butter, brown sugar, and cinnamon in a small bowl.  Drizzle the topping on top of the batter and mix it using a toothpick.

  7. Bake in the oven for 35-40 minutes.  A toothpick should come out clean.

  8. Let the bread cool on a wire rack or cooling rack.  Use a knife to cut the bread into slices and serve.
