Apple Sour Cream Oatmeal Muffins

In my opinion, oatmeal muffins have the best texture!   These sour cream oatmeal apple muffins are incredible!

Ingredients

  • 1 cup all-purpose flour
  • 1 cup rolled oats avoid using quick oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup sour cream
  • 1/2 cup unsalted butter melted
  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cup fresh apples, peeled and chopped

Instructions

  1. Preheat your oven  to 375°F

  2. Spray your muffin pan with cooking spray.

  3. In a large bowl, whisk together the dry ingredients: Oats, baking powder, baking soda, salt, cinnamon, and nutmeg.

  4. In a medium bowl, whisk together wet ingredients: Sour cream, melted butter, brown sugar, granulated sugar, eggs, and vanilla extract until smooth.

  5. Add the wet and dry ingredients and stir until combined (don’t overmix). Fold in the diced apples.

  6. Divide the muffin batter evenly among the prepared muffin cups, filling each about ¾ full.

  7. Bake in the preheated oven for 18–22 minutes or until a toothpick inserted into the center of a muffin comes out clean.

  8. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
