In my opinion, oatmeal muffins have the best texture! These sour cream oatmeal apple muffins are incredible!
Preheat your oven to 375°F
Spray your muffin pan with cooking spray.
In a large bowl, whisk together the dry ingredients: Oats, baking powder, baking soda, salt, cinnamon, and nutmeg.
In a medium bowl, whisk together wet ingredients: Sour cream, melted butter, brown sugar, granulated sugar, eggs, and vanilla extract until smooth.
Add the wet and dry ingredients and stir until combined (don’t overmix). Fold in the diced apples.
Divide the muffin batter evenly among the prepared muffin cups, filling each about ¾ full.
Bake in the preheated oven for 18–22 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
