
Cheddar Apple Scones are buttery, flaky scones filled with sharp cheddar cheese and tender Granny Smith apple chunks. They're the perfect recipe for fall baking.
Cook the apples with the butter, sugar, and cinnamon for about 5 minutes. Transfer to a plate and place in the freezer until cold.
Freeze the butter for at least 30 minutes. Grate it using a cheese grater and return it to the freezer.
Grate the cheddar cheese and freeze it.
Chill the heavy cream in the freezer for about 35 minutes.
Preheat the oven to 400°F. Line a baking sheet with parchment paper.
Add the self-rising flour, salt, cinnamon, and nutmeg to a large bowl or the bowl of a stand mixer. Mix in the frozen butter until coarse crumbs form.
Stir in the frozen cheddar cheese.
Whisk together the egg and heavy cream.
Add the wet ingredients to the dry ingredients and mix only until a shaggy dough forms.
Fold in the chilled apples.
Turn the dough onto a lightly floured surface. Fold it three times to create layers.
Pat the dough to about 1 inch thick and cut with a biscuit cutter.
Transfer the scones to the prepared baking sheet and freeze for 20 minutes.- This step is optional if you used frozen ingredients while making the dough.
Brush the tops with heavy cream
Bake for 20 to 24 minutes until deeply golden.
Cool on a wire rack before serving.
