Ingredients

  • 1 cup  mashed ripe bananas
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/2 cup honey
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1.5 cups rolled oats
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a 12-cup muffin tin with paper liners.

  2. In a large mixing bowl, combine the mashed bananas, pumpkin puree, eggs, honey or maple syrup, melted coconut oil or butter, and vanilla extract. Mix until well combined.

  3. In a separate bowl, whisk together the oats, flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

  4. Add the dry ingredients to the wet ingredients and stir until just combined. Be careful not to overmix.

  5. Divide the batter evenly among the muffin cups.

  6. Bake in the oven for 18-22 minutes or until a toothpick inserted into the center comes out clean.

  7. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature.
