Lemon Dill Potato Crusted Salmon

Treat your guests to this succulent, melt-in-your-mouth salmon with crispy lemon herb potatoes on top this holiday season.

Ingredients

  • 1  2-3 lb Fresh Salmon Fillet
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • 3 tablespoons lemon juice
  • 10 ounce shredded potatoes
  • 2-3 tablespoons dried or fresh dill
  • 3 cloves minced garlic

Instructions

  1. 1. Preheat oven to 400 degrees Fahrenheit.

  2. 2. Place shredded potatoes into a small bowl; toss the potatoes with 1/2 the salt, olive oil, 1/2 the pepper, dill, garlic, and lemon juice.

  3. 3. Line the baking sheet with parchment paper.  Place fish on a baking sheet.  Season salmon with the remaining salt and pepper on top of the fish. You can choose to add additional olive oil or butter on top.

  4. 4. Bake in the oven for 20 minutes.  The cook time may vary slightly depending on how thick your salmon is.  Salmon should have an internal temperature of 145 degrees Fahrenheit. And potatoes should achieve your desired crispiness before removing the salmon from the oven.
