Winter Fruit Pizza Sugar Cookies

These Fruit Pizza Sugar Cookies are chewy on the inside with a crisp edge.   They are loaded with cream cheese frosting and decked out with all your favorite winter fruits!

Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cornstarch
  • 1/2 teaspoon salt
  • 1 cup softened unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon lemon extract or another extract such as vanilla, almond, or orange

Cream Cheese Frosting

  • 8 ounces softened cream cheese
  • 1/2 cup  butter softened
  • 2 teaspoons vanilla extract
  • 4 cups powdered sugar

Toppings

  • Pomegranate seeds
  • Green Apple
  • Kiwi
  • additional fruit

Instructions

  1. Preheat oven to 375 degrees f.  line or spray baking sheets.

  2. In a bowl, whisk together dry ingredients.  Flour, baking soda, cornstarch, and salt.  Set aside.

  3. Cream butter, sugar, eggs, and lemon extract with an electric mixer.

  4. Add dry ingredients to the butter mixture and mix until a sugar cookie dough is formed.  Don't overmix.  

  5. Using a cookie scoop, drop 1-inch balls onto your baking sheet at least one inch apart.  

  6. Bake in the oven for 10 minutes.

  7. While the cookies are baking, prepare your frosting and fruit.

  8. Remove cookies from the oven and cool them on a wire cooking rack.   Do not frost the cookies until the cookies are completely cooled!
