Cuban Waffle Sandwich

Ingredients

Cuban Pulled Pork

  • 1 small onion
  • 2 pounds pork tenderloin
  • 1/2 cup freshly squeezed orange juice
  • 1/4 cup lime juice
  • 1 teaspoon oregano
  • 2-3 cloves minced garlic
  • 1 cup water
  • 1 teaspoon olive oil

Cuban Sandwich

  • 1/2 cup cooked Cuban pulled pork
  • 1-2 slices Swiss cheese
  • 1-2 slices deli ham
  • pickles
  • mustard
  • 2 Van’s® Power Grains® Original Waffles

Instructions

Pressure Cooker Cuban Pulled Pork

  1. Set your Pressure Cooker to Saute.

  2. Add olive oil, onions, garlic, and spices. Saute until the onions are translucent.

  3. Add Pork, orange juice, and lime juice.

  4. Seal lid on your pressure cooker and cook on high pressure for 40 minutes.

  5. Let naturally release. Your pork should fall apart once it is cooked. If you're not planning on eating the pork right away, store the pork with the cooking liquid in the fridge or freezer.

Cuban Sandwich

  1. On 1 toasted waffle build your sandwich. Add pulled pork, deli ham, and swiss cheese.

  2. Toast in your toaster oven or a regular oven for 10 minutes, or until the cheese is melted to your preference. Toast the second waffle alongside your sandwich.

  3. Top your sandwich. Add your desired amount of mustard and pickles, and dig in!
