Whole 30 Instant Pot Vegetable Beef Stew

Ingredients

  • 2 pounds stew meat
  • 1 small yellow onion
  • 4 carrots, peeled and chopped
  • 2 cloves garlic
  • 2 russet potatoes, chopped
  • 3 cups spinach
  • 1 32 ounce container beef broth
  • 2 teaspoons olive oil
  • 2 small tomatoes, diced
  • 1/2 teaspoon pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Set your Instant Pot to Saute. 

  2. Drizzle olive oil in the bottom of the Pan.  Add garlic and onions. saute until the onions are translucent. 

  3. Add beef, tomatoes, carrots, potatoes, spinach, broth and seasonings in no particular order. 

  4. Place the lid on your Instant Pot and cook on high pressure for 35 minutes. 

  5. Let NPR, as so the stew doesn't splatter when the pressure is released. 

  6. Store or serve!
