Cream Cheese Mint Cookies

Ingredients

  • 1/2 cup cream cheese 4 ounces
  • 1/2 cup butter room temperature
  • 1 cup sugar
  • 1-2 teaspoons real mint extract
  • 1 egg
  • 1/2 teaspoon baking powder
  • 1 dash salt
  • 1 1/2 cups all purpose flour

Instructions

  1. Mix the dry ingredients in a bowl—flour, baking powder, salt and set aside.

  2. Use an electric mixer to cream together, cream cheese and butter. Followed by the sugar and mint extract.

  3. Add Egg and to the mixture and mix well.   Make sure to keep scraping the sides of the bowl to make sure everything gets mixed.

  4. Add the dry ingredients and mix well.

  5. Chill cookie dough for at least an hour.

  6. Preheat oven to 350 degrees

  7. Use a cookie scoop to scoop out balls of dough and place them on a lined baking sheet. The dough will be sticky. You may want to roll them into balls, but you don't have to.

  8. Bake for 10-12 minutes. Or until you see the edges start to turn a golden color.

  9. Remove from oven and let cool before serving.
