Brown Butter Banana Snickerdoodles

These Brown Butter Banana Snickerdoodles are caramelly, soft, chewy, and sweet.

Servings 12 cookies

Ingredients

  • 1/2 stick butter browned
  • 1 ripe banana mashed
  • 1 teaspoon pure vanilla extract
  • 1 egg
  • 1 cup all-purpose flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder

Sugar Coating

  • 3 tablespoons sugar
  • 1 teaspoon cinnamon

Instructions

  1. Brown your butter: add butter to a large saucepan and place over low heat. The butter will begin to crackle and then foam. After a couple of minutes, the butter will begin to brown and turn a nice golden amber color on the bottom of the saucepan.  Whisk butter continuously as it cooks.

  2. Cool brown butter for 10 minutes.

  3. In a medium-sized bowl, mix butter, mashed banana, egg, and vanilla extract.

  4. In a second bowl, mix flour, salt, baking powder, and cinnamon.

  5. Chill dough for at least one hour.

  6. In a small bowl mix 2-3 tablespoons of sugar with 1 teaspoon of cinnamon

  7. Using a cookie scoop, form cookie dough into balls. Roll each ball in cinnamon and sugar.

  8. Preheat oven to 350 degrees

  9. Add cookie dough to a lined baking sheet. Bake for 12-15 minutes, or until cookies turn golden brown.
