Drizzle olive oil into the bottom of the slow cooker.
Add cauliflower gnocchi, garlic, Italian seasoning, tomatoes, and feta cheese. Stir and set your slow cooker to low.
Cook on low for 3-4 hours. Mix everything once the cheese has softened and the tomatoes are blistered.
On a sheet pan, place cauliflower gnocchi, garlic, Italian seasoning, tomatoes, and feta cheese and mix.
Roast in the oven for 400 degrees for 25 minutes. Remove from oven and mix the melted feta cheese and the blistered tomatoes with the cauliflower gnocchi. Serve.
