Instant Pot Lemon Basil Chicken Noodle Soup


  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 3 carrots peeled and chopped
  • 2 celery stalks trimmed and chopped
  • 8 fresh basil leaves
  • 3 tablespoons lemon juice
  • 1 leftover rotisserie chicken You can sub 2 chicken breasts
  • 32 ounces water Use chicken broth if you are making the soup with chicken breasts


  1. Add olive oil, onion, celery, carrots, chicken, basil, lemon juice, and water to your instant pot's inner pot.

  2. Close instant pot and secure lid

  3. Cook on high pressure for 15 minutes

  4. While the soup is cooking, cook noodles on the stove and drain.

  5. Let pressure naturally release

  6. Remove chicken bones and skin from the soup. Remove the bones and skin using a draining spoon to scoop the bones out.

  7. Add noodles to each bowl as you serve the soup.
