  • 18 eggs
  • salt and pepper to taste
  • 1/2 cup fresh spinach chopped
  • 1/4 cup grape tomatoes chopped
  • 1 teaspoon Greek seasoning
  • 1 teaspoon oregano
  • 1 tablespoon dillweed you can also use fresh dill
  • 1-2 tablespoon olive oil
  • 1-2 cloves minced garlic
  • 1/8 cup red onion chopped
  • kalamata olives as much as you prefer
  • feta cheese as much as you prefer


  1. Preheat the oven to 350 degrees and brush olive oil onto your sheet pan

  2. Crack each individual egg into a small bowl, then place the eggs into a mixing bowl.

  3. Add spices, garlic, onion, spinach, and tomatoes to the eggs.

  4. Mix the egg mixture well- until blended.

  5. Pour the egg mixture onto your 9x18 sheet pan.

  6. Bake for 15-18 minutes. or until the eggs have set.

  7. Remove from the oven. Add kalamata olives, feta cheese, and any additional vegetables on top of the eggs.

  8. cut the eggs into 12 equal pieces.

  9. Serve immediately or store the pieces in the fridge for up to five days.
