15 minute butternut squash soup

Ingredients

  • 1 small onion
  • 3 tablespoons olive oil
  • 3 bags 10-ounce frozen butternut squash
  • 32 ounces chicken broth
  • 3 cloves garlic minced
  • salt and pepper to taste
  • 2 teaspoons dried sage
  • 3/4 cup milk or cream of your choice

Instructions

  1. In a saucepan, over medium heat, place frozen butternut squash, chicken broth, chopped onion, and garlic.

  2. Bring to a boil. Add salt, pepper, and sage. Cook for about 10 minutes. 

  3. Using your immersion blender, blend the soup until it is smooth. You can also blend it in a traditional blender.

  4. You will need to return the soup to the pan and add milk or cream.  Serve and enjoy.
