Instant Pot Chimichurri Pork Carnitas


  • 2-3 pound pork tenderloin roast
  • salt and pepper to taste
  • 1/2 cup Chimichurri sauce

Chimichurri Sauce

  • 1 cup chopped fresh parsley
  • 4 cloves minced garlic
  • 2 tablespoons dried oregano
  • 1/2 teaspoon salt
  • 1/4 cup red wine vinegar
  • 3/4 cup olive oil


Chimichurri Sauce

  1. Add all of the chimichurri sauce ingredients into a food processor and pulse for about 10 seconds.  If you don't have a food processor, mix with a whisk, but make sure all the ingredients are finely chopped. 

Instant Pot pork Carnitas

  1. Set your Instant Pot to saute.  Add a small amount of oil to the bottom of your pan, and season your pork with salt and pepper. 

  2. Seer the pork lightly. 

  3. Turn off the saute setting.  Add Chimichurri sauce and water to your pressure cooker. 

  4. Cook on high pressure for 1 hour.  You can certainly get away with cooking it for 45 minutes, but I like my pork, so it shreds at the touch of a fork.  

Vent instant pot when the cooking has been completed.

  1. Shred the pork in the juices. 

  2. Place all the shredded pork on a sheet pan, with all the juices. 

  3. Broil in the oven until your pork has gotten crispy to your liking. 

  4. Remove from oven and serve!
