Scrambled Egg Puff Pastry Pies

Servings 8


  • 2 sheets frozen puff pastry dough
  • 10 eggs
  • 1 tsp olive oil
  • 1 tablespoon milk
  • 1 dash salt
  • 1/2 cup chopped ham pieces
  • 1/2 cup shredded cheese

Egg Wash

  • 1 egg white
  • 1 tbsp water


  1. Add eggs to a saucepan, add in olive oil, milk, and salt.  Whisk the eggs together and cook on low heat. 

  2. Once the eggs are cooked, set aside 

  3. Chop ham

  4. Roll out the puff pastry dough and cut each piece into 8 slices.  

  5. Place some scrambled eggs, ham and cheese on a bottom slice and place another slice on top. 

  6. secure the pastries together with a fork. 

  7. Make egg wash and brush some egg wash on each pastry. 

  8. Cook at 400 degrees for 18 minutes.  

  9. Remove from the oven when the puff pastry is cooked to your liking.  You can store these in the fridge for a few days and freeze them.
