Spicy pepita chocolate granola bars

Servings 12 granola bars


  • 2 cups rolled oats
  • 1/4 cup melted coconut oil
  • 1/4 cup peanut butter
  • 1/2 cup honey
  • 1 teaspoon cayenne pepper
  • 1/4 cup pepitas
  • 1/4 cup chocolate chips
  • 1 teaspoon chia seeds
  • 1 teaspoon wheat germ


  1. In a bowl, whisk peanut butter, coconut oil, and honey together. 

  2. In a second bowl, mix oats, pepitas, cayenne pepper, chocolate chips, chia seeds and wheat germ. 

  3. Pour the dry ingredients into the wet ingredients 

  4. Line a 13X9 pan with parchment paper and pour the granola mixture into the pan. 

  5. Cover the pan and place the granola in the fridge.  Cool for 2-3 hours

  6. Once the granola is cooled and set, cut the granola bars.  Eat or store in the fridge.
