Pressure Cooker Pork Loin Cowboy Foil Packets

Ingredients

  • 1 Smithfield Slow Smoked Mesquite Flavor Pork Loin Filet
  • 1.5 lbs small yellow skinned potatoes
  • 1 bag frozen corn
  • 1 can kidney beans
  • 3 green onions
  • 1 tablespoon canola oil
  • 1/2 teaspoon sea salt

Instructions

  1. Cut small potatoes in half, wash them and place them in a bowl.  toss the potatoes with salt and olive oil.  

  2. Prepare foil packets.  Tear off 4-6 pieces of tin foil and fill them.  Place the potatoes on the bottom, followed by beans and corn.  Cut the Smithfield Slow Smoked Mesquite Flavor Pork Loin Filet into 1-inch slices, place 2 slices into each foil packet.  

  3. fold each foil packet so there isn't an opening. 

  4. Place 2 cups of water at the bottom of your pressure cooker, and place the trivet on top. Stack your foil packets on top of the trivet. 

  5. Cook on high pressure for 20-23 minutes. 


  6. Release pressure. remove foil packets from the pressure cooker and serve!

Recipe Notes

You can also cook these foil packets in the oven.  400 degrees for 20 minutes.
